CABERNET SOUVIGNON

Cabernet, small Cabernet

Historical signs: French vine coming from the Bordeaux. Different they are the hypotheses around the origin of his/her name: one tie him/it to the Vitis Carbunica of Plinio, another to his/her Gascon correspondent Cabornet.
Spread in Italy to the beginning of the 800 through the Piedmont.

Characters Ampelografici: middle leaf, pentagonal, pentalobata - middle or middle-small cluster, cylindrical pyramidal, generally compact with a pronounced wing - middle grape, spherical with pruinose peel, thick, consistent and of blue-black color.

Maturation: average-late

Vigor: good

The wine's characteristics: it draws a full-bodied wine, with good acidity, sometimes with tannins some hard ones.
Aging wine, vinificato comes in purity, but more often it competes in uvaggi, particularly to the cut Bordolese, with the Merlot and Cabernet Franc
